I used this instead of regular linguine. I made white clam sauce with fresh clams. The 'noodles' are made from hearts of palm. Surprisingly good.

I'm not going vegan. I just get tired of eating the same old thing and I try to eat healthy. It's easy to overdo it on carbs. The more you eat, the more you want. Carbs are like crack.

These noodles look just like linguine. They are packed in water. You rinse them off and add whatever sauce you want. Like wheat pasta, it takes on the taste of whatever sauce you chose. It's slightly crunchy, has a little bite.

As my paternal grandma always said, dont overcook the pasta! That what the Irish do! Pasta cooked properly has some bite. Al dente as they say.

These hearts of palm noodles are a good alternative to eating pasta. Even if it's just a now and then thing. The same company also make rice out of the same hearts of palm. I have made cauliflower 'mashed potatoes' and rice before. It's pretty good. I'm going to try Cajun-style red beans and rice with the Palmini riced variant.

Most people eat too many carbs and not enough vegetables, so this is a good way to remedy that.
