When I was active on SigTalk many moons ago, some tool posts a story about a negligent discharge. He's fiddling with a pistol on his bench that's in a spare bedroom. The gun fires. The round goes thru an inside wall, across the living room, thru a window and into the neighbor's vinyl siding. Presumably lodged somewhere in the exterior wall of the neighbors home.

As if that's not bad enough, he posts a photo of his bench and the interior wall the bullet went thru. There's a half-empty bottle of Jack Daniels and a glass on the bench. Gee...I wonder how this happened?

I stayed out of the conversation until others noticed the booze and lectured him. He became belligerent. Classic blame shifter. Somehow the gun was partially responsible and everyone else is an asshole for mentioning the booze. If you saw the photos you would immediately be grateful his wife or kids were not sitting in the living room watching TV and one of them catching a bullet in the head. Or if the round went thru a neighbors window and hit someone inside.

How dumb was this guy that he didn't think anybody would conclude he was fucking around with a gun while consuming alcohol? He refused to accept he was negligent. Like most drunks that negligently kill somebody.
 
Check it out, I just made 6 pounds of smoked sausage last week along with I pounds of fresh sausage.

Turkey with cheddar cheese.

Venison with hot pepper cheese. Pork butt added for fat.
When I grind venison, I just vacuum pack in in one pond packs to be use like hamburger one mix it with spices and vacuum pack in one pound package.
OK. Back on topic.

I'm motivated. I have to make some sausage. I confess to loving cured meat. If I die from eating it, I will die happy.

My paternal grandfather and grandmother made their own. My parents not. So I never really learned how to do it. When my grandfather died, there was homemade pepperoni hanging from the rafters in his attic, drying.

I've visited regions in Italy where they produce prosciutto di parma. The real thing tastes like a gift from God.

I helped my neighbor salt cure 5 pork hams one year. They turned out ok, but all that salt is not for me. I would like to do a sugar cure, the recipes I read still had lots of salt.

When I started making sausage I bought three how-to books with recipes. There is a chapter on dried sausage that I haven't tried yet but would like too. I guess you can find all that online now.

So far, I do a lot of smoked and fresh sausage, this year I have added turkey sausage that's made some really good stuff, defiantly will be stocking up on cheap turkeys this year when they go on sell.

When I grind, I grind several kinds of meats to make it worthwhile dragging out the grinder, mostly venison, pork, and turkey.
If you like meat loaf here is a ready mix I do. 1/2 lbs of each venison, pork, turkey. Freeze it till ready for meatloaf.

I'm sure all of you have noticed how expensive lunch meat is now.
Most of the lunch meat is just rough ground sausage. I make a turkey sausage on the mild side that we use for turkey sandwiches that's really good and doesn't have a high fat content or the other thigs I cannot pronounce. Next time I smoke venison I am going to try a milder mix for lunchmeat. When lunchmeat costs over $12 or more per pound it makes it worthwhile to just make your own.

A story about salt pork.

My parents decided to host Christmas dinner one year. I was out of the country and couldn't attend but my sister and eldest brother went with their families. My mother told them they would be doing ham this year, not turkey as was the tradition. My sister usually hosted Christmas dinner.

My parents had visited some area in TN and while there bought a traditional salt cured ham. It's important to note that my mother was on the list of the world's worst cooks. My sister and I used to play a game at dinner called "what is it". The only time I had a decent meal my entire childhood was when one of my friends mother invited me to stay for dinner. We weren't poor. My mother hated cooking and when I say the shit she put on the table wasn't fit for hogs I am not exaggerating.

First of all, she froze it for a couple of years. The first bad sign. Mom takes it out of the freezer but doesn't read the instructions. It's uncooked. But you have to soak it first. And rinse it. Over a couple of days. She unwrapped the ham as-is and put it in the oven Christmas Day. Like you would one of those precooked honey baked hams.

Suffice it to say, it was so tough you couldn't chew it. And so salty it burned your tongue. Literally inedible. Buzzards wouldn't eat it. So Mom made grilled cheese sandwiches in the oven with rubber Kraft American cheese squares and Wonder bread. My brother wisely passed on that, went home and made pancakes for the kids.

My big sister called me in Tunis in the middle of the night to tell me the Mom and the salted ham saga. We hadn't played 'what is it' for many years. It made me laugh and lifted my spirits being a million miles from home on Christmas.

Lmao Mom did this once. Dad being the 4H award winning champ he was. Took 1 bite, got up and threw the entire thing in trash- cussed all the way to the car. Went and got us a pizza. Think it was several days before he could speak about it.

Bonus hunt coming up. Driving around WMAs today found 2 buck big rubs and lots of bear scat. 1 scratch tree, several bear prints.
Believe its anything goes hunt. Doe, Buck, Bear.
 
My wife stepped-out the front door yesterday to enjoy the rain and observe. Suddenly, a magnificent buck with quite a rack of antlers stepped-out into view. He wasn't huge, but a younger one, but just picture-perfect and very regal. Spectacular. She got a video of it but no stills. He sauntered into the back yard and stayed awhile. Hoping we see him with the rest of the crew that hangs out here, today.
 
Think Georgia gets around 50,000 deer involved auto accidents annually. Those are just the 1s reported. Imagine another 20,000 dont get reported- Semi's, older vehicles no collision insurance etc.
Maybe 50 to 100 are fatal.
Population is + 1 Million whitetail and thats a conservative ##. It also doesnt include high fence pompous hunt clubs or/with exotics.

Crop damage is in the $billions. Remember 1 year in the 90s I was home and cousin had planted same 40 acres 3x. 4th time it was a massacre and still lost the crop. 30 guys and spot lights( with permit) 15 the 1 night I was there. Lol. This went on for the month.

Sooooo brown is down 7 days aweek.
We have gotten better at conservation. As a kid damn near everything was on endangered list. Buddy drove me around 1 WMA last week- 50+ goffer tortoise holes MARKED, pileated woodpeckers, turkeys to the point of nuisance, hawks. Just tons of cool stuff.

But also saw 20 acres of 100 acre field reduced to a waste land from hog and deer. Mostly hogs- he killed 2 hogs while we were standing there talking to a farmer. Working on getting permission & permit to slow it down some.
Coyote is A PROBLEM!! I have seen a red wolf in south east. Most waterheads think all k9 are Coyote 😢 though.
Fox populations are stupid- basically had to build a level 5 supermax to keep the chickens safe. Several Bald Eagles have made the attempt. THAT IS A BIG BIRD!!! 1 got caught in the netting and was none to pleased with our efforts to free it. They take small pets all the time ROFLMAO. Last German Shepherd thought I was messing with him when that super chicken came down after the baby goats. He was like Fuck you, fuck the goats, fuck the cats just FUCK. Sat on porch for a week contemplating life. This dog hasnt had the pleasure yet. Although a Barred owl did make an attempt at him when he around 6months.
