I once went to a training session and the guy seated next to me had a leather case like pilots used to have years ago for their charts. In it he had about a dozen different kinds of hot sauce. He went on and on about Scoville units and which sauce paired with a certain meal etc.
I have a friend who loves that shit. He'll have sweat beading up on his forehead from it.
Personally, I like a little heat, but I don't want my food to torture me while I eat it.
One of my favs from the Tabasco cook book was put 2-3 shakes in the popcorn maker together with the butter/oil.
