I’m gonna agree with the guy with bolts in his neck. Best BBQ I ever had was in Texas. I prefer dry rub. If it needs sauce, you ain’t cooking it right. BTW I have 3 bottles of sauce in the pantry.

People in Memphis tell you that but it’s not the truth. The title would go to Kansas City or Lockhart Texas. Depending on where you are, it’s the way they cook and season the meat and not the type of meat they use but, it is correct, most Texas BBQ is centered around beef as it is such a huge part of their economyAnyone who knows anything about BBQ knows that Memphis is BBQ Mecca.

Dude... I spent 4 years there. Ate a LOT of BBQ. There's a BBQ joint on every corner. All of them one-off family run places. Each with a different spin on BBQ. And there's a reason they have the World Championship BBQ there every May.
We frequented a wide spectrum of BBQ restaurants from dives like "Interstate BBQ" (in the BAD part of town) to the hoity-toity "Rendezvous" (famous for dry rub ribs).
If I recall, Kansas City is all about beef short ribs, right? I'll eat'em. But not really a fan.

Texas is also known for beef BBQ, especially brisket. Again... I'll eat it and enjoy it. I've had some good Texas BBQ. But I much prefer pork, Memphis-style.

You do know there are multiple World BBQ championships and not just one in Memphis or even in the US? The Memphis one is pretty darn big but so is the one in KC.
